About This Free Webinar

Internal audits are designed to identify problems before an auditor does, but many programs focus too heavily on checklists, documentation and easy-to-find issues. This session explores why internal audits can miss significant food safety risks and how to make your audit program more effective.

Live on Friday, January 22, 2027.

Friday, January 22, 2027, 12:00–1:00 PM CT, live online. Registration is free. Reserve your spot.

Key Topics Covered

What this 60-minute session covers.

  • Moving Beyond Checklist-Based Internal Auditing

Why a clause-by-clause checklist confirms paperwork exists but can miss how the system really works.

  • Identifying Systemic and Recurring Issues

Spotting the patterns that connect individual findings to a weakness in the system.

  • Conducting Process-Based, Risk-Focused Audits

Following a process end to end and spending audit time where the food safety risk is highest.

  • Asking Better Questions and Interviewing Employees Effectively

Open questions and floor conversations that show what people actually do, not just what the procedure says.

  • Recognizing Issues That Routine Audits Overlook

Where routine audits tend to have blind spots, and how to look there.

  • Turning Audit Findings into Meaningful Improvement

Writing findings that lead to real corrective action instead of a quick fix.

  • Strengthening Auditor Competency and Objectivity

Building internal auditor skills, and keeping auditors independent of the work they audit.

Checklist Audits vs. Risk-Based Audits

Both have a place. The difference is what each one can find.

  • Tests documents

    Checklist-Based Audit

Works through the standard clause by clause and confirms that each required document or record exists. It's quick and repeatable, but it mostly tests paperwork, so a well-documented program can look compliant while practices on the floor drift.

  • Tests the system

    Process-Based, Risk-Focused Audit

Follows a process, such as receiving through shipping, and checks records against what is actually happening: observing tasks, talking with the people doing them and tracing a lot or a shift through the system. Audit time goes where the food safety risk is highest.

  • Both, weighted by risk

    What Effective Programs Do

Use the checklist to make sure nothing is skipped, then spend most of the audit on risk: high-risk processes, recent changes, repeat findings and areas with complaints or unusual results.

Why do internal audits miss food safety risks?

Common reasons include audits that only check whether documents exist, the same checklist and auditor every time, too little time on the production floor, auditors reviewing their own work, and findings closed with a quick correction instead of a root cause. This session looks at why it happens and what to do differently.

What is a process-based internal audit?

An audit that follows a process from start to finish, for example receiving through storage, production and shipping, and checks whether controls work in practice by observing tasks, talking with employees and comparing records with what is actually happening. See checklist vs. risk-based audits.
