About This Free Webinar

Collecting environmental samples does not automatically mean an environmental monitoring program is effective. This session explores why organizations can have extensive environmental monitoring data while still struggling to identify and prevent contamination risks.

Live on Friday, July 9, 2027.

Friday, July 9, 2027, 12:00–1:00 PM CT, live online. Registration is free. Reserve your spot.

Key Topics Covered

What this 60-minute session covers.

  • Building a Risk-Based Environmental Monitoring Program

Starting from your products, processes and facility, not a generic sampling plan.

  • Selecting Appropriate Sampling Locations

Sampling where pathogens are likely to hide, not just where swabbing is easy.

  • Understanding Environmental Monitoring Zones

How Zones 1 to 4 help you plan sampling around food-contact risk.

  • Sampling Frequency and Program Design

Deciding how often, when and how many sites to sample.

  • Interpreting and Trending Environmental Monitoring Data

Reading results over time to spot problems before they reach product.

  • Responding Effectively to Positive Results

What to do when a swab comes back positive, and how fast.

  • Connecting Environmental Monitoring Results to Corrective Actions

Linking positives to root cause investigation and corrective action.

  • Identifying Opportunities for Preventive Improvement

Using what the program finds to improve sanitation, equipment and practices.

Environmental Monitoring Zones

Most programs organize sampling sites by sanitary zone, from food-contact surfaces out to areas outside production.

  • Food contact

    Zone 1

Direct food-contact surfaces, such as conveyors, slicers, fillers, utensils and work tables.

  • Next to food contact

    Zone 2

Non-food-contact surfaces close to food-contact surfaces, such as equipment frames, housings and control panels.

  • Processing area

    Zone 3

Non-food-contact surfaces farther away in the processing area, such as floors, drains, walls and carts.

  • Outside processing

    Zone 4

Areas outside processing, such as warehouses, hallways, locker rooms and break rooms.

Zones 1 to 4 are common industry practice for organizing a program, not a regulatory definition. A program that rarely finds anything isn't proof of a clean plant: it may be sampling the wrong places or the wrong times.

What are environmental monitoring zones?

A common way to organize sampling sites by how close they are to exposed food: Zone 1 is food-contact surfaces, Zone 2 is non-food-contact surfaces next to them, Zone 3 is the rest of the processing area, and Zone 4 is outside processing. It's industry practice, not a regulatory definition. See environmental monitoring zones.

Why can an environmental monitoring program have lots of data and still miss contamination?

Because the value of the data depends on where, when and how often you sample, and what you do with the results. Sampling only easy-to-reach sites, sampling right after sanitation, or not trending results over time can all leave real problems undetected.
