What Is HACCP Training?
HACCP training is a structured educational course that teaches food safety professionals how to develop, implement, and maintain a Hazard Analysis and Critical Control Points (HACCP) plan, the internationally recognized, science-based system for identifying and controlling food safety hazards at critical points in the production process. A properly implemented HACCP plan is a regulatory requirement for seafood, juice, and meat/poultry processors under FDA and USDA rules, and a mandatory component of every GFSI-benchmarked certification standard including SQF, BRCGS, and FSSC 22000.
Kiwa ASI’s HACCP training course is accredited by the International HACCP Alliance (IHA), which means the curriculum meets the training standards recognized by FDA, USDA, CFIA (Canadian Food Inspection Agency), and all major GFSI scheme owners. The course follows the 12-step Codex Alimentarius framework for HACCP development and covers all seven HACCP principles in depth, from conducting a hazard analysis to establishing record-keeping procedures. Unlike self-paced recorded courses, Kiwa ASI’s HACCP training is delivered live via Zoom by an experienced food safety instructor, giving participants the opportunity to ask questions, work through real-world scenarios, and receive hands-on guidance for building their facility’s HACCP plan.
Upon successful completion of the course and required assessments, participants receive an IHA-accredited HACCP Certificate of Attendance, the credential recognized by food safety auditors, regulatory inspectors, and GFSI certification bodies worldwide.

Upon successful completion, you receive an IHA-accredited HACCP Certificate of Attendance recognized by FDA, USDA, CFIA, and all GFSI certification bodies (SQF, BRCGS, FSSC 22000, IFS, PrimusGFS). The certificate is emailed within one week of course completion.
HACCP training focuses on the seven HACCP principles and HACCP plan development based on the Codex Alimentarius. PCQI training covers the broader FSMA Preventive Controls for Human Food rule (21 CFR 117), including HACCP-based principles plus supply chain controls, recall plans, and allergen management.
