What Is HACCP Training?

HACCP training is a structured educational course that teaches food safety professionals how to develop, implement, and maintain a Hazard Analysis and Critical Control Points (HACCP) plan,  the internationally recognized, science-based system for identifying and controlling food safety hazards at critical points in the production process. A properly implemented HACCP plan is a regulatory requirement for seafood, juice, and meat/poultry processors under FDA and USDA rules, and a mandatory component of every GFSI-benchmarked certification standard including SQF, BRCGS, and FSSC 22000.

Kiwa ASI’s HACCP training course is accredited by the International HACCP Alliance (IHA), which means the curriculum meets the training standards recognized by FDA, USDA, CFIA (Canadian Food Inspection Agency), and all major GFSI scheme owners. The course follows the 12-step Codex Alimentarius framework for HACCP development and covers all seven HACCP principles in depth, from conducting a hazard analysis to establishing record-keeping procedures. Unlike self-paced recorded courses, Kiwa ASI’s HACCP training is delivered live via Zoom by an experienced food safety instructor, giving participants the opportunity to ask questions, work through real-world scenarios, and receive hands-on guidance for building their facility’s HACCP plan.

Upon successful completion of the course and required assessments, participants receive an IHA-accredited HACCP Certificate of Attendance,  the credential recognized by food safety auditors, regulatory inspectors, and GFSI certification bodies worldwide.

IHA-Accredited HACCP Certification
Kiwa ASI’s HACCP training is accredited by the International HACCP Alliance (IHA), the gold standard for HACCP education. IHA accreditation means your HACCP certificate is recognized by FDA, USDA, CFIA, and every major GFSI certification standard, providing documented proof of training that auditors and inspectors accept.
Live Virtual — Not Pre-Recorded
This is not a passive, self-paced course. Kiwa ASI’s HACCP training is delivered live via Zoom by an experienced food safety instructor. Participants engage in real-time discussion, ask questions about their specific products and processes, and work through HACCP plan development with expert guidance.
Meets FDA, USDA & GFSI Requirements
The course satisfies HACCP training requirements under FDA regulations (21 CFR 120 for juice, 21 CFR 123 for seafood), USDA FSIS Pathogen Reduction/HACCP rule for meat and poultry, and the HACCP competency requirements of all GFSI-benchmarked standards including SQF, BRCGS, FSSC 22000, and IFS.
Practical, Hands-On Approach
Participants don’t just learn HACCP theory — they apply it. The course includes guided exercises in hazard analysis, CCP determination, critical limit establishment, and HACCP plan documentation using real-world food safety scenarios relevant to manufacturing, processing, and packaging operations.
