What does a food safety consultant do?

A food safety consultant helps a food, beverage, packaging, dietary supplement or cannabis facility design, document and implement the programs required by regulators, certification schemes and customers. At Kiwa ASI that includes building or reviewing HACCP and food safety plans, writing cGMP and cGAP standard operating procedures, assembling a GFSI-ready food safety management system manual, running gap analyses and sanitary design assessments, and developing food defense, food fraud, crisis management and food safety culture plans. The consultant works alongside your quality team so the system fits how your facility actually operates.

Which standards and regulations does Kiwa ASI consult on?

Kiwa ASI consultants work with SQF, BRCGS, FSSC 22000, IFS and PrimusGFS certification requirements, FSMA Preventive Controls for Human Food under 21 CFR Part 117, FDA current good manufacturing practices, cGMP for dietary supplements under 21 CFR Part 111, ISO 22716 for cosmetics, USDA and state agricultural requirements, and cannabis quality management system requirements such as CSQ and state GMP rules. If a customer has issued a proprietary supplier standard, we can build your programs to that standard as well.

Does using Kiwa ASI consulting affect my certification audit?

No. All consulting services are delivered through ASI Training and Consulting, LLC, which operates separately from our accredited certification body, ASI Food Safety, LLC. Consultants who help build your system do not audit your facility for certification, and the certification body does not see your consulting work. This separation is required by ISO/IEC 17065 and by GFSI-benchmarked schemes to protect audit impartiality, and it means you remain free to certify with Kiwa ASI or with any other certification body.

How long does it take to set up a HACCP plan or food safety plan?

For a single-site facility, a HACCP plan or FSMA food safety plan is typically developed over several weeks to a few months, depending on the number of products and processes, the condition of existing documentation, and how quickly your team can validate critical limits and generate records. Kiwa ASI scopes the project during an initial call and gives you a fixed timeline before work begins. Facilities preparing for a first certification audit should plan for 6 to 12 months from kickoff to audit so programs have time to generate the records auditors sample.

Can consulting be delivered remotely?

Yes. Document-based work such as HACCP plan review, SOP writing, GFSI manual development and food fraud vulnerability assessments can be completed remotely through video calls and shared document review. Work that depends on seeing the facility, including gap analyses, sanitary design assessments and food defense site assessments, is best done on site. Many clients combine a remote documentation phase with a shorter on-site visit to reduce cost.

What is the difference between a gap analysis and a pre-assessment?

A gap analysis is done early, before or during implementation, and answers the question of what still needs to be built by comparing your programs clause by clause against the target standard. A pre-assessment is a practice audit run close to the certification date, after the system is in place, and answers whether you would pass. Kiwa ASI offers both through ASI Training and Consulting, LLC, and each ends with a written report and prioritized action plan.
